Atlanta Top Chef Kevin Gillespie joins the show to talk about his best grilling tips and plays Craft Beer or Baby Name!

Top Chef contestant and Atlanta chef Kevin Gillespie joined the show to talk about his restaurants, Gunshow, Revival, and a new food truck, Communion. He also describes his perfect pizza, the joy of cooking, and the lack of food in his own pantry. 

Jenn made Jeff play the game Craft Beer or Baby Name, and it's pretty self-explanatory. He had to guess if a name Jenn gave out is either a craft beer or a celebrity baby name. This time, Jeff is competing against Kevin himself! And Jeff pretty much crashed and burned. Here are the names they had to guess, and the answers are below the audio if you play along after (or if you just want to go ahead and cheat!).

Since Memorial Day weekend is upon us, we wanted to pick the brain of the most famous chef in Atlanta for the best grilling tips. Jeff also wants to be his best friend and go on a man date, but that's not really the point. So, Kevin shared with us his go to grilling tips to make the best food in Memorial Day history!

Kevin Gillepsie’s Grilling Tips:

  1. Mise en place! This French phrase, basically meaning gather your resources, is an essential first step. Before you start to grill, make sure you’ve gathered and organized all of your food, accessories, and other supplies that you’re going to need so that your grilling station is as efficient as possible.
  2. All meat cooks better when it’s tempered. So don’t cook your meat straight out of the fridge, and instead let it sit in room temperature for about a half hour to an hour. It’s safe to temper meat for up to four hours, and it will always have better results than straight-from-the-fridge meat.
  3. Everything cooks better if it’s dried off first. If you’re planning on using a marinade, then before it goes on the grill make sure to pat off the excess liquid before putting it on. That way there’s no liquid that needs to steam off first, and you’ll get those perfect grill marks you’re working for.
  4. Control the temperature of your grill. A general rule of thumb is to hold your hand about 5 inches above the grill and if you can count five seconds without moving your hand then the temperature isn’t hot enough yet, and if you can’t hold your hand for more than 2 seconds then your grill is too hot.
  5. Avoid your meat thermometer! Whatever you do, avoid punching a hole in your meat because all that juicy flavor inside will take the path of least resistance and leak right out. Instead, follow your timing, follow your heat, and follow your instincts. Practice touching the meat and reading the firmness as well to determine doneness. Then lastly, let your cooked meat rest for another 5-10 minutes before serving.
